2016 carbonic counoise: From the David Girard Vineyard in the Sierra Foothills, farmed organically but not certified. Picked at 22 brix made in the traditional carbonic method, 18 days of enzymatic fermentation and then a light foot tread to finish fermentation. This wine has no S02 and was aged in neutral oak and stainless for 4 months before bottling. Classic GlouGlou wine, light bodied, smoke, fruit and floral notes.
