Also from the Lost Slough vineyard this wine is bottled unfiltered with partial malo to create a slight spritz in bottle. The CO2 created by the malo to lactic fermentation maintains its freshness. No SO2 or yeast was added to this wine. This was an experiment that worked (hence the small production)… nutty and saline but with great acid and freshness. This is a surprisingly mellow and sensuous wine given its acidity perhaps due to resting a year in bottle prior to release. A little sediment is normal. Guaranteed to put you in a good mood…We love this wine!
